Hi everyone, I thought you would like to see my spinach crepes. As a child I wouldn't eat spinach, as most kids do, so my mum, bless her heart, would wash and cook the spinach, chop it up, and then put two table spoons of olive oil in a pan, added a hand full of bread crumbs and toasted the crumbs to a golden color and then add the spinach, salt to taste.
The key here is what happens next. The crepes were made and cooked in a non-stick wok with a spray of oil. An amount of the spinach was put into each crepe. Here is the key bit. And why I loved them. They were then fried in a little bit of butter. Yum-o. The butter gave them a beautiful taste and made the crepe alittle crispy. Life was good with mum's cooking.
